Instructions
Prepare the meat: Cut the lamb or beef into 1.5-inch cubes and place in a large bowl.
Make the marinade: In a separate bowl, mix grated onion, minced garlic, cumin, paprika, coriander, black pepper, salt, olive oil, lemon juice, and yogurt.
Marinate the meat: Pour the marinade over the meat cubes, ensuring all pieces are well-coated. Cover and refrigerate for at least 2 hours, preferably overnight.
Skewer the meat: If using wooden skewers, soak them in water for 30 minutes to prevent burning. Thread the marinated meat onto the skewers, leaving a small space between each piece.
Grill the kebabs: Preheat the grill to medium-high heat. Grill the kebabs for about 10-12 minutes, turning occasionally, until the meat is cooked through and slightly charred.
Rest and serve: Remove the kebabs from the grill and let them rest for 5 minutes. Serve hot with flatbread, rice, or a fresh salad.
Chef's Tips
- Meat Selection: For the most authentic flavor, use lamb, but beef works well too. Choose cuts with some fat for juicier kebabs.
- Marinating Time: The longer you marinate, the more flavorful the kebabs will be. Overnight marination is ideal.
- Grilling Tip: Don’t overcrowd the skewers. Leave space between meat pieces for even cooking.
- Alternative Cooking: If you don’t have a grill, you can cook the kebabs in a grill pan or under the broiler.
- Serving Suggestion: Serve with a side of garlic yogurt sauce and grilled vegetables for a complete meal.
