- 1 tsp garlic powder
- Salt and black pepper to taste
- 1 egg (beaten, for egg wash)

Preheat oven to 400°F (200°C). Roll out the puff pastry on a parchment-lined baking sheet and prick all over with a fork to prevent puffing.
Spread ricotta cheese evenly over the pastry, leaving a 1-inch border around the edges. Sprinkle with garlic powder, salt, and black pepper.
Arrange sliced heirloom tomatoes on top of the ricotta in an even layer. Drizzle lightly with olive oil.
Fold the edges of the pastry inward to create a rustic crust. Brush the edges with beaten egg for a golden finish.
Bake for 25-30 minutes, or until the crust is golden and crisp. Remove from oven and let cool slightly.
