Instructions
Preheat the oven to 400°F (200°C). Pat the chicken thighs dry with paper towels to ensure crispy skin.
Season the chicken thighs generously with salt and black pepper on both sides.
Heat olive oil in a large oven-safe skillet over medium-high heat. Add the chicken thighs, skin-side down, and cook for 5-6 minutes until the skin is golden and crispy.
Flip the chicken thighs and cook for another 3-4 minutes. Remove the chicken from the skillet and set aside.
In the same skillet, reduce the heat to medium. Add minced garlic, ginger, and red pepper flakes. Sauté for 30 seconds until fragrant.
Stir in honey, soy sauce, and apple cider vinegar. Simmer for 2-3 minutes until the sauce slightly thickens.
Return the chicken thighs to the skillet, skin-side up, and spoon the glaze over them. Transfer the skillet to the oven and bake for 10 minutes.
Remove from the oven and let the chicken rest for 5 minutes. Garnish with chopped parsley before serving.
Chef's Tips
- Crispy Skin Tip: Make sure the chicken skin is dry before cooking. You can leave it uncovered in the fridge for a few hours to dry out the skin.
- Sauce Thickness: If the glaze is too thin, simmer it for a few more minutes until it reaches your desired consistency.
- Spice Level: Adjust the red pepper flakes to your preferred level of spiciness.
- Serving Suggestion: Serve with steamed rice or roasted vegetables for a complete meal.
- Storage: Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven to maintain crispiness.
