Instructions
Season the beef: Pat the beef chuck roast dry with paper towels. Rub the roast with salt, black pepper, smoked paprika, and mustard powder.
Sear the beef: Heat a large skillet over medium-high heat. Sear the beef on all sides until browned, about 3-4 minutes per side. Transfer to the slow cooker.
Prepare the sauce: In a bowl, mix together beef broth, BBQ sauce, brown sugar, Worcestershire sauce, minced garlic, and sliced onions.
Cook the beef: Pour the sauce mixture over the beef in the slow cooker. Cover and cook on low for 8 hours or until the beef is tender and easily shreds.
Shred the beef: Remove the beef from the slow cooker and shred it using two forks. Return the shredded beef to the slow cooker and mix with the cooking juices.
Serve: Toast the hamburger buns lightly. Spoon the pulled beef onto the buns and serve with extra BBQ sauce if desired.
Chef's Tips
- Searing Tip: Searing the beef before slow cooking adds depth of flavor. Don’t skip this step for the best results.
- Make Ahead: This dish can be made a day ahead. The flavors develop even more when reheated.
- Freezing: Freeze leftover pulled beef in an airtight container for up to 3 months. Thaw and reheat when ready to use.
- Bun Options: Use brioche buns or pretzel buns for a richer taste and texture.
- Extra Toppings: Add coleslaw, pickles, or sliced jalapeños for extra crunch and flavor.
