Instructions
Prepare the skewers: Soak wooden skewers in water for at least 30 minutes to prevent burning during grilling.
Marinate the chicken: In a bowl, mix chicken chunks with olive oil, garlic powder, paprika, salt, and black pepper. Let marinate for 15 minutes.
Assemble the skewers: Thread marinated chicken, bell peppers, red onion, and zucchini alternately onto the skewers.
Grill the skewers: Preheat grill or grill pan to medium-high heat. Grill skewers for 4-5 minutes per side, or until chicken is fully cooked.
Make the peanut sauce: In a small saucepan, combine peanut butter, soy sauce, honey, lime juice, ginger, coconut milk, minced garlic, and red pepper flakes. Heat over low heat, stirring until smooth and well combined.
Serve: Arrange grilled skewers on a platter and drizzle with peanut sauce or serve sauce on the side for dipping.
Chef's Tips
- Soaking Skewers: Ensure skewers are fully submerged in water to prevent them from burning on the grill.
- Even Cooking: Cut chicken and vegetables into uniform sizes for even cooking.
- Sauce Consistency: Adjust coconut milk amount to achieve your desired peanut sauce thickness.
- Grill Temperature: Keep grill at medium-high heat to avoid charring the skewers too quickly.
- Extra Flavor: Add a splash of fish sauce or sesame oil to the peanut sauce for extra depth.
- Vegetarian Option: Substitute chicken with tofu or mushrooms for a vegetarian version.
