Instructions
Preheat the oven to 325°F (165°C). Place the ham on a rack in a roasting pan, flat side down. Score the surface of the ham in a diamond pattern about 1/4-inch deep.
In a small saucepan, combine the maple syrup, brown sugar, Dijon mustard, apple cider vinegar, cinnamon, cloves, and nutmeg. Heat over medium heat, stirring until the sugar dissolves. Simmer for 2-3 minutes until slightly thickened.
Brush half of the glaze evenly over the ham, making sure to get into the scored cuts. Cover the ham loosely with aluminum foil.
Bake the ham for 1 hour, basting with the pan juices every 20 minutes.
Remove the foil and brush the remaining glaze over the ham. Increase the oven temperature to 400°F (200°C) and bake for another 15-20 minutes until the glaze is caramelized and sticky.
Remove from the oven and let the ham rest for 15 minutes before slicing. Serve warm with any remaining pan juices.
Chef's Tips
- Ham Selection: Choose a fully cooked, bone-in ham for the best flavor and texture.
- Glaze Consistency: If the glaze is too thick, add a tablespoon of water to thin it out.
- Basting: Frequent basting ensures the ham stays moist and absorbs maximum flavor.
- Leftovers: Store leftover ham in an airtight container in the fridge for up to 5 days. Use in sandwiches, soups, or casseroles.
- Alternative Sweeteners: Honey or agave syrup can be substituted for maple syrup if needed.
