Instructions
Preheat the oven to 180°C (350°F). Heat the oil in a large pan over medium heat and sauté the onion until soft.
Add the minced meat to the pan and cook until browned, breaking it up with a spoon as it cooks.
Squeeze the excess milk from the soaked bread and add the bread to the meat mixture. Stir well.
Add the curry powder, apricot jam, vinegar, grated apple, and raisins to the pan. Mix thoroughly and cook for another 5 minutes.
Transfer the meat mixture to a greased baking dish and smooth the top with a spoon.
In a bowl, beat the eggs with the milk and pour over the meat mixture. Place the bay leaf on top.
Bake in the preheated oven for 30-40 minutes, or until the topping is set and golden brown.
Chef's Tips
- Meat Choice: Traditionally, lamb is used, but beef or a mix of both works well too.
- Spice Level: Adjust the amount of curry powder to suit your taste preference.
- Soaking Bread: Ensure the bread is well-soaked but not dripping wet for the best texture.
- Serving Suggestion: Serve with yellow rice and a side of chutney for an authentic experience.
- Leftovers: Bobotie tastes even better the next day as the flavors meld together.
