Instructions

1

Marinate the pork: In a bowl, mix olive oil, lemon juice, minced garlic, oregano, salt, black pepper, and paprika. Add pork cubes and coat well. Cover and refrigerate for at least 2 hours (or overnight for best flavor).

2

Skewer the meat: Thread the marinated pork cubes onto skewers (if using wooden skewers, soak them in water for 30 minutes first to prevent burning).

3

Grill the souvlaki: Preheat grill or grill pan to medium-high heat. Cook skewers for 8-10 minutes, turning occasionally, until pork is cooked through and slightly charred.

4

Warm the pita: Lightly grill the pita bread for about 30 seconds per side until warm and slightly toasted.

5

Assemble the souvlaki: Place a grilled pita on a plate, add slices of red onion and tomato, then place the pork skewer on top (or remove meat from skewer). Drizzle with tzatziki sauce and sprinkle with fresh parsley.

6

Serve immediately: Enjoy with extra tzatziki, lemon wedges, and a side of Greek salad if desired.

Chef's Tips

  • Meat Choice: Pork shoulder is traditional, but you can also use chicken or lamb.
  • Marination Time: Longer marination (overnight) enhances the flavor significantly.
  • Grill Tip: Don’t overcrowd the skewers to ensure even cooking.
  • Vegetarian Option: Substitute pork with halloumi cheese or mushrooms for a vegetarian version.
  • Serving Suggestion: Serve with a side of Greek fries (patates tiganites) for an authentic experience.
