- 2 cups all-purpose flour
- 1 cup warm water
- 1 tsp salt
- 2 tbsp vegetable oil
- 1 bunch sukuma wiki (collard greens)
- 1 onion, finely chopped
- 2 tomatoes, diced
- 2 cloves garlic, minced
- 1 tsp turmeric
- 1 tsp cumin
- 1 tbsp vegetable oil
- Salt to taste

Prepare the chapati dough: In a large bowl, mix flour and salt. Gradually add warm water and knead into a soft, smooth dough. Cover and let rest for 15 minutes.
Divide the dough into small balls. Roll each ball into a thin circle, brush with oil, fold into a semi-circle, then fold again into a quarter-circle.
Roll out each folded dough into a thin circle again. Heat a pan over medium heat and cook each chapati until golden brown spots appear, flipping and brushing with oil as needed.
Prepare the sukuma wiki: Wash and chop the collard greens into thin strips. Heat oil in a pan and sauté onions until translucent.
Add garlic, tomatoes, turmeric, and cumin to the pan. Cook until tomatoes soften. Stir in the chopped greens and cook until tender, about 10 minutes. Season with salt.
Serve warm chapati with sukuma wiki on the side. Enjoy this authentic Kenyan meal!
