Instructions
Prepare the marinade: In a small bowl, mix olive oil, lemon juice, lemon zest, minced garlic, chopped dill, salt, black pepper, and paprika.
Marinate the salmon: Place salmon fillets in a shallow dish and coat them evenly with the marinade. Cover and refrigerate for at least 30 minutes.
Preheat the grill: Heat the grill to medium-high (about 375°F). Lightly oil the grates to prevent sticking.
Grill the salmon: Place salmon fillets skin-side down on the grill. Cook for 4-5 minutes, then carefully flip and cook for another 3-4 minutes until the salmon flakes easily with a fork.
Grill the asparagus: Toss asparagus with olive oil, salt, and pepper. Grill for 3-4 minutes, turning occasionally, until tender.
Serve: Plate the grilled salmon with asparagus. Drizzle with melted butter and garnish with extra dill and lemon slices.
Chef's Tips
- Freshness Check: Ensure the salmon smells fresh, like the ocean, and has firm, shiny flesh.
- Skin-On Tip: Leaving the skin on helps hold the fillet together while grilling and adds extra flavor.
- Don’t Overcook: Salmon is best when slightly pink in the center. It will continue cooking after removal from heat.
- Marinade Time: For deeper flavor, marinate the salmon for up to 2 hours, but not longer as the acid can start to cook the fish.
- Alternative Cooking: If you don’t have a grill, you can broil the salmon in the oven for similar results.
