Instructions
Chill the glass: Place a rocks glass or coupe glass in the freezer to chill while you prepare the cocktail.
Combine ingredients: In a cocktail shaker, add whiskey, lemon juice, simple syrup, and egg white (if using).
Dry shake: Secure the lid and shake vigorously for about 15 seconds without ice to emulsify the egg white.
Add ice: Open the shaker, add ice, then shake again for another 10-15 seconds until well-chilled.
Strain: Strain the mixture into the chilled glass. If you prefer, you can strain it over fresh ice in a rocks glass.
Garnish: Add a few drops of Angostura bitters on top of the foam and garnish with a lemon wheel or cherry.
