Prepare the ginger syrup: In a small saucepan, combine the sliced ginger and honey (or maple syrup) with 1/2 cup of water. Bring to a simmer over medium heat, stirring occasionally. Let it simmer for 5 minutes, then remove from heat and let it cool.
Strain the ginger syrup: Once cooled, strain the syrup through a fine-mesh sieve into a bowl or jar, pressing the ginger to extract all the liquid. Discard the ginger pieces.
Mix the drink: In a pitcher, combine the ginger syrup, sparkling water, and freshly squeezed lime juice. Stir gently to mix.
Chill: Add ice cubes to serving glasses and pour the ginger fizz over the ice.
Garnish: Top each glass with fresh mint leaves for an aromatic touch.
