- 10 medium apples (a mix of sweet and tart varieties)
- 1 orange, sliced
- 1/2 cup brown sugar
- 2 cinnamon sticks
- 1 tbsp whole cloves
- 1 tbsp whole allspice
- 1 tsp ground nutmeg
- 8 cups water
- Optional: 1/4 cup maple syrup for extra sweetness

Wash and quarter the apples (no need to peel or core). Place them in a large pot.
Add the orange slices, brown sugar, cinnamon sticks, cloves, allspice, and nutmeg to the pot.
Pour in the water, ensuring the apples are fully submerged. Bring the mixture to a boil over medium-high heat.
Reduce heat to low, cover, and simmer for 1 hour, stirring occasionally to help break down the apples.
After simmering, mash the softened apples with a potato masher to release more flavor.
Strain the mixture through a fine-mesh sieve or cheesecloth into a clean pot or pitcher. Discard the solids.
Taste and adjust sweetness with maple syrup if desired. Serve warm or chilled.
