Instructions
Boil the water in a saucepan over medium heat. Add the crushed cardamom pods, cinnamon stick, cloves, ginger, and any optional spices.
Let the spices simmer in the water for 3-4 minutes to infuse the flavors. The water should become fragrant.
Add the tea leaves or tea bags to the spiced water. Simmer for another 2 minutes. Avoid over-boiling to prevent bitterness.
Pour in the milk and stir well. Bring the mixture to a gentle boil, then reduce the heat and let it simmer for 3-4 minutes.
Add sugar to taste and stir until dissolved. Simmer for another minute.
Strain the chai into cups using a fine mesh strainer. Serve hot and enjoy the aromatic flavors.
Chef's Tips
- Fresh Spices: For the best flavor, use whole spices and crush them lightly before adding.
- Milk Options: Substitute whole milk with almond, oat, or soy milk for a dairy-free version.
- Stronger Tea: For a stronger tea flavor, steep the tea leaves longer, but avoid boiling them too long to prevent bitterness.
- Froth: For a café-style latte, froth some warm milk separately and pour it over the strained chai.
- Sweetener: Replace sugar with honey or jaggery for a different sweetness profile.
