Ingredients
- 2 cans (5 oz each) tuna in water, drained
- 1/4 cup mayonnaise
- 1/4 cup finely chopped celery
- 2 tbsp finely chopped red onion
- 1 tbsp lemon juice
- 1/2 tsp Dijon mustard
- Salt and black pepper to taste
- 4 slices bread (sourdough or whole wheat)
- 4 slices cheddar cheese
- 2 tbsp butter, softened

In a medium bowl, combine the drained tuna, mayonnaise, celery, red onion, lemon juice, and Dijon mustard. Mix well until all ingredients are evenly incorporated.
Season the tuna mixture with salt and black pepper to taste. Adjust the seasoning if needed.
Preheat a skillet or griddle over medium heat.
Butter one side of each bread slice. Place two slices, buttered side down, on the skillet.
Spread a generous amount of the tuna mixture on each slice of bread in the skillet. Top each with two slices of cheddar cheese.
Place the remaining bread slices on top, buttered side up. Press down gently with a spatula.
Cook for about 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.
Remove from the skillet, let cool for a minute, then slice in half and serve warm.
