Instructions
Cook the beef: Heat oil in a skillet over medium heat. Add ground beef and cook until browned. Drain excess fat, then stir in taco seasoning and 1/4 cup water. Simmer for 5 minutes.
Warm the tortillas: Heat tortillas in a dry skillet for about 30 seconds per side or microwave wrapped in a damp paper towel for 20 seconds to make them pliable.
Assemble the burritos: Lay a tortilla flat. Spread 1/4 cup refried beans in the center, then add 1/4 of the beef mixture, 1/4 cup rice, cheese, tomatoes, onions, and cilantro.
Fold the burrito: Fold the sides of the tortilla inward, then roll from the bottom up tightly to enclose the filling.
Optional grilling: Heat a clean skillet over medium heat. Place the burrito seam-side down and cook for 1-2 minutes per side until golden and crisp.
Serve: Cut burritos in half if desired. Serve with sour cream, salsa, and extra cilantro on the side.
Chef's Tips
- Meat Variations: Substitute beef with chicken, pork, or tofu for different flavors.
- Rice Tip: Use cilantro-lime rice for extra flavor by mixing chopped cilantro and lime juice into cooked rice.
- Extra Fillings: Add guacamole, lettuce, or jalapeños for more texture and flavor.
- Make Ahead: Assemble burritos ahead and wrap in foil. Reheat in the oven at 350°F for 15 minutes.
- Freezing: Wrap burritos tightly in plastic wrap and foil. Freeze for up to 3 months. Reheat in the oven straight from frozen.
