- 1 large romaine lettuce, chopped
- 1/2 cup grated Parmesan cheese
- 1 cup croutons
- 1 clove garlic, minced
- 1 egg yolk
- 1 tbsp Dijon mustard
- 2 tbsp lemon juice
- 1/2 cup olive oil
- 2 anchovy fillets (optional)
- Salt and black pepper to taste

Prepare the dressing: In a bowl, whisk together the egg yolk, Dijon mustard, lemon juice, and minced garlic until smooth.
Slowly drizzle in the olive oil while continuously whisking to emulsify the dressing. Add anchovy fillets (if using) and mix well.
Season the dressing with salt and black pepper to taste. Set aside.
Prepare the salad: In a large bowl, add the chopped romaine lettuce.
Drizzle the dressing over the lettuce and toss gently to coat all the leaves evenly.
Add the croutons and grated Parmesan cheese, then toss lightly once more.
Serve immediately, garnished with extra Parmesan cheese if desired.
