Instructions
Marinate the chicken: Mix chicken with shawarma spices, yogurt, half the minced garlic, lemon juice, and olive oil. Let it marinate for at least 1 hour (overnight for best flavor).
Make garlic sauce: Combine remaining yogurt, minced garlic, tahini, and a pinch of salt. Mix well and refrigerate.
Cook chicken: Heat a pan over medium-high heat. Cook chicken for 6-7 minutes per side until fully cooked and slightly charred. Let rest, then slice thinly.
Prepare vegetables: Slice cucumber, tomato, and red onion. Warm pita bread slightly.
Assemble wraps: Spread garlic sauce on pita, add chicken slices, then layer with vegetables.
Wrap tightly: Fold sides inward, then roll from the bottom up. Secure with foil if needed.
Serve immediately while warm, optionally with extra sauce on the side.
Chef's Tips
- Marinating Tip: For maximum flavor, marinate chicken overnight in the refrigerator.
- Vegetarian Option: Substitute chicken with grilled halloumi or falafel.
- Spice Control: Adjust shawarma spice amount based on your heat preference.
- Warming Pita: Lightly toast pita for better flexibility when wrapping.
- Extra Crisp: For charred edges, cook chicken in a very hot pan or grill.
- Sauce Variations: Add pickle slices or hot sauce for extra tang and heat.
- Meal Prep: Prepare components separately and assemble wraps fresh when ready to eat.
