- 2 heads romaine lettuce, chopped
- 1/2 cup grated Parmesan cheese
- 1 cup croutons
- 2 cloves garlic, minced
- 2 anchovy fillets (optional)
- 1 egg yolk
- 1 tbsp Dijon mustard
- 1 tbsp lemon juice
- 1/2 cup olive oil
- Salt and black pepper to taste

Prepare the dressing: In a bowl, whisk together minced garlic, anchovy fillets (if using), egg yolk, Dijon mustard, and lemon juice until smooth.
Slowly drizzle in olive oil while continuously whisking until the dressing emulsifies and thickens. Season with salt and black pepper to taste.
Wash and dry the romaine lettuce thoroughly. Chop into bite-sized pieces and place in a large salad bowl.
Add half of the grated Parmesan cheese to the lettuce and toss lightly.
Pour the dressing over the salad and toss gently to coat all the leaves evenly.
Add croutons and the remaining Parmesan cheese on top. Serve immediately.
