Instructions
Heat the tomato soup in a saucepan over medium heat. Stir occasionally until it begins to simmer.
Reduce the heat to low and stir in the heavy cream. Add dried basil, salt, and pepper to taste. Keep warm while preparing the sandwich.
Butter one side of each bread slice. Place a slice of cheese between two slices of bread, buttered sides facing out.
Heat a skillet over medium heat. Place the sandwich in the skillet and cook until the bread is golden brown and the cheese starts to melt, about 3-4 minutes per side.
Remove the sandwich from the skillet and cut it diagonally into halves.
Ladle the warm tomato soup into bowls. Serve immediately with the grilled cheese sandwich on the side.
Chef's Tips
- Soup Variations: Add a pinch of red pepper flakes for a spicy kick or a teaspoon of sugar to balance the acidity of the tomatoes.
- Cheese Choices: Experiment with different cheeses like mozzarella, gouda, or Swiss for unique flavors.
- Bread Options: Use sourdough or whole grain bread for added texture and flavor.
- Extra Crispy: Press the sandwich lightly with a spatula while cooking to ensure even browning and crispiness.
- Garnish: Sprinkle fresh basil or parsley on top of the soup for a fresh, vibrant touch.
