Instructions
1
Rinse the millet under cold water until the water runs clear. This removes any bitterness.
2
In a medium saucepan, bring 2 cups of water to a boil. Add the rinsed millet and reduce heat to low. Cover and simmer for 15 minutes.
3
Once the millet is cooked and water is absorbed, stir in the milk, honey, vanilla extract, and cinnamon. Cook for another 5 minutes until creamy.
4
While the porridge cooks, wash and slice the berries if needed.
5
Remove the porridge from heat and let it sit for 2 minutes to thicken.
6
Divide the porridge into bowls, top with fresh berries, and sprinkle chia seeds if desired. Serve warm.
Chef's Tips
- Soaking Tip: Soak millet for 30 minutes before cooking to reduce cooking time and improve texture.
- Sweetener Variations: Use maple syrup or agave instead of honey for a vegan option.
- Creaminess: For extra creaminess, stir in a tablespoon of coconut milk or yogurt before serving.
- Toppings: Add nuts or granola for extra crunch and nutrition.
- Leftovers: Store leftover porridge in the fridge for up to 2 days. Reheat with a splash of milk to restore creaminess.
