Instructions
Heat the milk: Pour the milk into a saucepan and heat over medium heat until it reaches 180°F (82°C), stirring occasionally to prevent scorching.
Cool the milk: Remove the milk from heat and let it cool to 110°F (43°C). This is the ideal temperature for yogurt cultures to thrive.
Add starter yogurt: Whisk in the plain yogurt until fully dissolved. For added flavor, mix in honey or vanilla extract if desired.
Pour into yogurt maker: Transfer the mixture into the yogurt maker’s containers, leaving a little space at the top for expansion.
Set the timer: Place the containers in the yogurt maker and set it for 8 hours. The longer it ferments, the tangier the yogurt will be.
Chill the yogurt: Once done, refrigerate the yogurt for at least 2 hours to thicken before serving.
Chef's Tips
- Milk Choice: Use whole milk for the creamiest texture, but 2% or skim milk will also work.
- Starter Yogurt: Ensure your starter yogurt contains live cultures for fermentation.
- Flavor Variations: Add fresh fruit, granola, or nuts after fermentation for extra texture and taste.
- Storage: Store homemade yogurt in the fridge for up to 2 weeks.
- Consistency: For thicker yogurt, strain it through a cheesecloth for a few hours to remove excess whey.
