- 1/4 cup honey
- 2 tbsp coconut oil, melted
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1/2 cup dried cranberries
- 1/4 cup pumpkin seeds

Preheat the oven to 325°F (160°C) and line a baking sheet with parchment paper.
In a large bowl, combine the rolled oats, chopped almonds, chopped walnuts, and pumpkin seeds.
In a small bowl, whisk together the honey, melted coconut oil, vanilla extract, cinnamon, and salt.
Pour the wet mixture over the dry ingredients and stir until everything is well coated.
Spread the mixture evenly on the prepared baking sheet and press it down lightly.
Bake for 20-25 minutes, stirring halfway through, until the granola is golden brown.
Remove from the oven and let it cool completely. Stir in the dried cranberries once cooled.
Store in an airtight container at room temperature for up to 2 weeks.
