- 1 cup milk
- 1 large egg
- 2 tablespoons melted butter
- 1 teaspoon vanilla extract

Instructions
Add all the dry ingredients (flour, sugar, baking powder, baking soda, salt) to the blender. Pulse a few times to combine.
Add the milk, egg, melted butter, and vanilla extract to the blender. Blend on medium speed until the batter is smooth, about 30 seconds.
Let the batter rest for 5 minutes to allow the baking powder and baking soda to activate.
Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or cooking spray.
Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2 minutes.
Flip the pancakes and cook for another 1-2 minutes, until golden brown and cooked through.
Serve warm with maple syrup, fresh fruit, or your favorite toppings.
