- 3 cups rolled oats

- 1/2 cup honey or maple syrup
- 1/4 cup coconut oil, melted
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1/2 cup dried fruit (raisins, cranberries, or apricots)
- 1/4 cup shredded coconut (optional)

Preheat the oven to 325°F (160°C) and line a baking sheet with parchment paper.
In a large bowl, combine the rolled oats and mixed nuts.
In a small saucepan, gently warm the honey (or maple syrup), melted coconut oil, vanilla extract, cinnamon, and salt. Stir until well combined.
Pour the liquid mixture over the oats and nuts. Stir thoroughly until everything is evenly coated.
Spread the mixture evenly onto the prepared baking sheet. Press down lightly to form an even layer.
Bake for 20-25 minutes, stirring halfway through to ensure even browning. The granola is ready when golden and fragrant.
Remove from the oven and let it cool completely. Once cooled, mix in the dried fruit and shredded coconut (if using).
Store in an airtight container at room temperature for up to 2 weeks.
