Instructions
Heat a skillet over medium heat and add the butter or oil. Once melted, add the diced onions and bell peppers. Sauté until softened, about 3-4 minutes.
Add the cooked breakfast sausage or bacon to the skillet and stir to combine with the vegetables. Cook for another 1-2 minutes to heat through.
In a bowl, whisk the eggs with a pinch of salt and pepper. Pour the eggs into the skillet with the vegetables and meat. Stir occasionally until the eggs are fully cooked, about 3-4 minutes.
Warm the flour tortillas in a dry skillet or microwave for about 20 seconds to make them pliable.
Divide the egg mixture evenly between the two tortillas. Sprinkle shredded cheddar cheese on top of the eggs.
Fold the sides of the tortilla inward, then roll it up tightly to form a burrito. Serve immediately with salsa or hot sauce if desired.
Chef's Tips
- Customize It: Add other fillings like avocado, black beans, or hash browns for extra flavor and texture.
- Make Ahead: Prepare the filling the night before and assemble the burritos in the morning for a quick breakfast.
- Freezing: Wrap the burritos in foil and freeze for up to a month. Reheat in the oven or microwave when ready to eat.
- Cheese Tip: For extra meltiness, place the assembled burrito back in the skillet for a minute to melt the cheese.
- Healthy Option: Use whole wheat tortillas and add more vegetables for a healthier version.
