Instructions
In a large mixing bowl, combine the rolled oats, peanut butter, and honey. Stir until well mixed.
Add the mini chocolate chips, ground flaxseed, vanilla extract, cinnamon, and a pinch of salt. Mix thoroughly.
Place the mixture in the refrigerator for about 30 minutes to firm up. This makes it easier to roll into balls.
Once chilled, scoop out tablespoon-sized portions of the mixture and roll them into balls using your hands.
Place the energy balls on a baking sheet lined with parchment paper. If the mixture is too sticky, lightly wet your hands before rolling.
Store the energy balls in an airtight container in the refrigerator for up to a week, or freeze for longer storage.
Chef's Tips
- Substitute peanut butter with almond butter or sunflower seed butter for a different flavor.
- Add shredded coconut or chopped nuts for extra texture.
- For a protein boost, mix in a scoop of protein powder.
- If the mixture is too dry, add a little more honey or peanut butter.
- These energy balls are perfect for on-the-go snacks or post-workout fuel.
