Instructions
Preheat the oven to 450°F (230°C) and line a baking sheet with parchment paper.
In a large bowl, whisk together flour, water, garlic powder, onion powder, salt, and black pepper to form a smooth batter.
Dip each cauliflower floret into the batter, shaking off excess, and place them on the prepared baking sheet.
Bake for 20 minutes, flipping halfway through, until the cauliflower is golden and crispy.
In a separate bowl, mix buffalo sauce, melted butter, and honey (if using). Toss the baked cauliflower in the sauce until evenly coated.
Return the coated cauliflower to the baking sheet and bake for an additional 5 minutes to set the sauce.
Serve hot with ranch or blue cheese dressing for dipping.
Chef's Tips
- Extra Crispy: For crispier bites, spray the battered cauliflower with cooking spray before baking.
- Sauce Variations: Adjust the amount of buffalo sauce to control the spice level. Add a dash of vinegar for extra tang.
- Gluten-Free Option: Substitute all-purpose flour with chickpea flour or gluten-free flour blend.
- Make Ahead: Prepare the batter and cut the cauliflower ahead of time for quicker assembly.
- Storage: Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven for best texture.
