Instructions
Drain and rinse the chickpeas. Reserve a few whole chickpeas for garnish later.
In a food processor, combine the chickpeas, tahini, lemon juice, minced garlic, olive oil, cumin, and salt.
Process the mixture for about 1 minute until it starts to become smooth. Scrape down the sides as needed.
With the processor running, slowly add 2-3 tablespoons of water until the hummus reaches your desired creamy consistency.
Taste and adjust seasoning, adding more salt, lemon juice, or cumin if needed.
Transfer the hummus to a serving bowl. Drizzle with olive oil and sprinkle with paprika and the reserved chickpeas.
Serve with pita bread, vegetables, or as a spread. Enjoy immediately or refrigerate for later.
Chef's Tips
- Smooth Texture Tip: For extra smooth hummus, peel the chickpeas by gently rubbing them between your fingers after rinsing.
- Tahini Quality: Use high-quality tahini for the best flavor. Stir it well before measuring as the oil can separate.
- Garlic Tip: If you prefer a milder garlic flavor, roast the garlic cloves before adding them to the processor.
- Storage: Store hummus in an airtight container in the fridge for up to 5 days. Stir before serving if separation occurs.
- Variations: Add roasted red peppers, olives, or herbs like parsley for different flavor profiles.
