Instructions

1

Cut each mozzarella string cheese stick in half crosswise to make 24 shorter sticks. Place on a plate and freeze for 30 minutes.

2

Set up breading station: Place flour in one shallow bowl. In second bowl, whisk eggs with water. In third bowl, mix both breadcrumbs with garlic powder, oregano, salt and pepper.

3

Remove cheese from freezer. Dredge each piece in flour, shaking off excess. Dip in egg wash, then coat thoroughly with breadcrumb mixture.

4

Place breaded cheese sticks on a baking sheet and freeze for at least 1 hour (this prevents cheese from leaking during frying).

5

Heat 2 inches of vegetable oil in a heavy pot to 375°F (190°C). Fry sticks in batches for 30-45 seconds until golden brown, turning once.

6

Remove with slotted spoon and drain on paper towels. Let cool 1-2 minutes before serving with warm marinara sauce.

Chef's Tips

  • Freezing Tip: Don't skip the freezing steps - this ensures the cheese won't melt too quickly when frying.
  • Breading Tip: For extra crispiness, double coat by repeating the egg and breadcrumb steps.
  • Oil Temperature: Use a thermometer to maintain proper oil temperature for even cooking.
  • Baking Option: For healthier version, bake at 400°F (200°C) for 8-10 minutes instead of frying.
  • Cheese Choice: Use low-moisture mozzarella for best results - fresh mozzarella contains too much water.
  • Make Ahead: You can bread the sticks and freeze them up to 1 month before frying.
