Instructions
Cut each mozzarella string cheese stick in half crosswise to make 24 shorter sticks. Place on a plate and freeze for 30 minutes.
Set up breading station: Place flour in one shallow bowl. In second bowl, whisk eggs with water. In third bowl, mix both breadcrumbs with garlic powder, oregano, salt and pepper.
Remove cheese from freezer. Dredge each piece in flour, shaking off excess. Dip in egg wash, then coat thoroughly with breadcrumb mixture.
Place breaded cheese sticks on a baking sheet and freeze for at least 1 hour (this prevents cheese from leaking during frying).
Heat 2 inches of vegetable oil in a heavy pot to 375°F (190°C). Fry sticks in batches for 30-45 seconds until golden brown, turning once.
Remove with slotted spoon and drain on paper towels. Let cool 1-2 minutes before serving with warm marinara sauce.
Chef's Tips
- Freezing Tip: Don't skip the freezing steps - this ensures the cheese won't melt too quickly when frying.
- Breading Tip: For extra crispiness, double coat by repeating the egg and breadcrumb steps.
- Oil Temperature: Use a thermometer to maintain proper oil temperature for even cooking.
- Baking Option: For healthier version, bake at 400°F (200°C) for 8-10 minutes instead of frying.
- Cheese Choice: Use low-moisture mozzarella for best results - fresh mozzarella contains too much water.
- Make Ahead: You can bread the sticks and freeze them up to 1 month before frying.
