Cut the avocados in half, remove the pit, and peel. Slice each half into 4-6 wedges, depending on size.
Set up a breading station: Place flour in one bowl, beaten eggs in another, and mix panko breadcrumbs with garlic powder, paprika, salt, and black pepper in a third bowl.
Dredge each avocado wedge in flour, shaking off excess. Dip into the beaten eggs, then coat evenly with the seasoned panko mixture.
