- 4 cups arugula
- 1 ripe pear, thinly sliced
- 1/4 cup walnuts, toasted
- 1/4 cup crumbled goat cheese
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1 tsp honey
- Salt and pepper to taste

Prepare the vinaigrette: In a small bowl, whisk together olive oil, balsamic vinegar, honey, salt, and pepper until well combined.
Toast the walnuts: Heat a dry skillet over medium heat. Add walnuts and toast for 3-4 minutes, stirring occasionally, until fragrant. Remove from heat and let cool.
Slice the pear: Core the pear and slice it thinly. To prevent browning, you can toss the slices with a little lemon juice.
Assemble the salad vertically: On a serving plate, arrange arugula in a tall mound. Layer pear slices around the sides of the arugula.
Add toppings: Sprinkle toasted walnuts and crumbled goat cheese over the top of the salad.
Drizzle with vinaigrette: Just before serving, drizzle the prepared vinaigrette over the salad. Toss lightly if desired.
