- 1 cup croutons
- 1 clove garlic, minced

- 1 tsp Dijon mustard
- 1/4 cup olive oil

Prepare the kale: Wash the kale thoroughly and pat dry. Remove the stems and chop the leaves into bite-sized pieces.
