Prepare the mangoes: Peel and dice the mangoes into small, even pieces. Place them in a large mixing bowl.
Chop the vegetables: Finely chop the red onion, dice the red bell pepper, and mince the jalapeño (remove seeds for less heat). Add them to the bowl with the mangoes.
Add herbs and seasoning: Chop the fresh cilantro and add it to the bowl. Squeeze the lime juice over the mixture, then sprinkle with salt and black pepper.
Mix gently: Toss all the ingredients together until well combined. Be careful not to mash the mango pieces.
