- 2 cans young green jackfruit in brine
- 1 cup BBQ sauce
- 1 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tsp smoked paprika
- 1/2 tsp cumin
- 1/2 tsp salt
- 1/4 tsp black pepper
- 8 slider buns
- 1 cup vegan coleslaw
- 8 dill pickle slices

Drain and rinse jackfruit. Pat dry, then cut off the hard core parts. Use your fingers to shred the jackfruit into stringy pieces resembling pulled pork.
Heat olive oil in a large skillet over medium heat. Add diced onion and cook until translucent, about 3 minutes. Add garlic and cook 1 more minute.
Add shredded jackfruit to the skillet. Stir in smoked paprika, cumin, salt, and black pepper. Cook for 5 minutes, stirring occasionally.
Pour BBQ sauce over the jackfruit mixture. Stir well to combine. Reduce heat to low and simmer for 10 minutes, stirring occasionally.
While jackfruit simmers, lightly toast the slider buns if desired. Prepare coleslaw if not using pre-made.
Assemble sliders: Place a generous portion of BBQ jackfruit on each bun bottom. Top with coleslaw and a pickle slice. Cover with bun tops and serve warm.
