Prepare the strawberries: Wash, hull, and chop the strawberries into small pieces. Place them in a large bowl.
Macerate the strawberries: Add sugar and lemon juice to the chopped strawberries. Mix well and let sit for 30 minutes to draw out the juices.
Cook the mixture: Transfer the strawberry mixture to a large pot. Bring to a boil over medium-high heat, stirring occasionally.
Simmer: Reduce heat to medium-low and let the mixture simmer for about 20-25 minutes, stirring frequently to prevent sticking.
Check consistency: To test if the jam is ready, place a small amount on a chilled plate. If it thickens and doesn't run, it's done.
Add vanilla (optional): Stir in vanilla extract for extra flavor, then remove from heat.
Store: Pour the hot jam into sterilized jars, seal tightly, and let cool. Store in the refrigerator for up to 3 weeks or process for longer shelf life.
