- 1 kg fresh strawberries, hulled and chopped
- 500 g granulated sugar
- 1 lemon, juiced
- 1 tsp vanilla extract (optional)

Prepare the strawberries: Wash, hull, and chop the strawberries into small pieces. Place them in a large mixing bowl.
Macerate the strawberries: Add sugar and lemon juice to the strawberries. Mix well and let them sit for at least 1 hour to draw out the juices.
Cook the jam: Transfer the strawberry mixture to a large pot. Bring to a boil over medium heat, stirring occasionally.
Simmer: Reduce the heat to low and let the mixture simmer for about 20-25 minutes, stirring frequently to prevent sticking.
Check consistency: To test if the jam is ready, place a small amount on a chilled plate. If it thickens and doesn't run, it's done.
Add vanilla (optional): Stir in vanilla extract for extra flavor, then remove from heat.
Jar the jam: Carefully pour the hot jam into sterilized jars. Seal tightly and let cool to room temperature before storing.
