Instructions
Prepare the fruits: Wash and chop the fruits into small pieces. You can mix different fruits or layer them for a colorful effect.
Blend the mixture: In a blender, combine half of the fruits with coconut water or fruit juice, honey or agave syrup (if using), and lemon juice. Blend until smooth.
Layer the popsicles: Pour a small amount of the blended mixture into each popsicle mold. Add some chopped fruits, then fill the rest with the blended mixture. Leave a little space at the top for expansion.
Insert sticks: Place the popsicle sticks into the molds. If your mold doesn’t have a lid, cover the top with aluminum foil and poke the sticks through the foil to hold them in place.
Freeze: Place the molds in the freezer and let them freeze completely for at least 4 hours or overnight.
Unmold the popsicles: To remove the popsicles, run the molds under warm water for a few seconds to loosen them. Gently pull the sticks to release the popsicles.
Chef's Tips
- Fruit Variations: Use any seasonal fruits you like. Berries, peaches, and pineapple work great.
- Sweetness Control: Adjust the sweetness by adding more or less honey or agave syrup based on your preference.
- Creamy Option: For a creamier texture, blend in some yogurt or coconut milk.
- Quick Unmolding: If the popsicles are hard to remove, let the molds sit at room temperature for a minute before trying again.
- Storage: Store popsicles in an airtight container or freezer bag to prevent freezer burn. They can last up to 2 weeks.
