Instructions
Preheat oven to 375°F (190°C). Grease a 9x13-inch baking dish with butter or cooking spray.
In a large bowl, combine sliced peaches, granulated sugar, brown sugar, cinnamon, nutmeg, and lemon juice. Mix well and set aside to let the flavors meld.
In another bowl, whisk together flour, baking powder, and salt. Add melted butter, milk, and vanilla extract. Stir until just combined to form a batter.
Pour the batter into the prepared baking dish, spreading it evenly.
Spoon the peach mixture over the batter, including any juices. Do not stir.
Bake for 45-50 minutes, or until the crust is golden brown and the peaches are bubbly. Let cool slightly before serving.
Chef's Tips
- Peel Peaches Easily: Blanch peaches in boiling water for 30 seconds, then transfer to ice water. The skins will slip off easily.
- Serve Warm: Peach cobbler is best served warm with a scoop of vanilla ice cream or whipped cream.
- Storage: Store leftovers covered in the refrigerator for up to 3 days. Reheat in the oven for best texture.
- Frozen Peaches: If fresh peaches aren't available, use frozen peaches (thawed and drained) as a substitute.
- Extra Crust: For a thicker crust, double the batter ingredients and spread half in the dish before adding peaches, then top with the remaining batter.
