Instructions
Prepare the fruit: Wash, peel (if necessary), and remove any seeds or pits from the fruit. Cut into small chunks.
Blend the fruit: Place the fruit chunks in a blender or food processor. Add honey or maple syrup (if using) and lemon juice. Blend until smooth.
Strain the mixture: Pour the puree through a fine-mesh strainer to remove any remaining seeds or fibers for a smoother texture.
Prepare the baking sheet: Line a baking sheet with parchment paper or a silicone mat. Pour the puree onto the sheet and spread it evenly into a thin layer (about 1/8 inch thick).
Dry the fruit leather: Place the baking sheet in an oven set to the lowest temperature (around 140°F or 60°C). Let it dry for 4-6 hours, or until the puree is no longer sticky and can be peeled off easily.
Cut and store: Once dried, peel the fruit leather off the parchment paper and cut into strips. Roll them up and store in an airtight container for up to 2 weeks.
Chef's Tips
- Fruit Selection: Use ripe, sweet fruit for the best flavor. Overripe fruit works great too!
- Thickness: Ensure the puree is spread evenly to avoid uneven drying.
- No Oven Option: Use a food dehydrator if available, following the manufacturer’s instructions.
- Flavor Variations: Mix different fruits or add spices like cinnamon for extra flavor.
- Storage: Keep in a cool, dry place to maintain freshness.
