Instructions
Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan and set aside.
In a medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, cloves, and ginger.
In a large bowl, beat sugar and oil together until well combined. Add eggs one at a time, mixing well after each addition.
Stir in pumpkin puree and water until smooth. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
If using, fold in chopped walnuts. Pour batter into the prepared loaf pan.
Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Chef's Tips
- Freshness Tip: For best flavor, use fresh pumpkin puree or high-quality canned puree without additives.
- Spice Adjustment: Adjust the spice quantities to your taste - some prefer more cinnamon or nutmeg.
- Storage: Wrap cooled bread tightly in plastic wrap and store at room temperature for up to 3 days.
- Freezing: This bread freezes well. Slice before freezing for easy portioning.
- Variation: Add chocolate chips or dried cranberries for different flavor profiles.
- Doneness Test: If the top browns too quickly, tent with foil during the last 15-20 minutes of baking.
