Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
In a large mixing bowl, combine the peanut butter, sugar, egg, vanilla extract, baking soda, and salt. Mix until well combined.
Using a cookie scoop or tablespoon, portion the dough into 1-inch balls. Place them on the prepared baking sheet, spacing them about 2 inches apart.
Flatten each dough ball slightly with a fork, creating a crisscross pattern on top.
Bake for 8-10 minutes, or until the edges are lightly golden. The cookies will be soft but will firm up as they cool.
Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
