Prepare the apple cores: Remove any seeds or stems from the apple cores. Roughly chop them into smaller pieces for easier cooking.
Cook the apple cores: In a medium saucepan, combine the apple cores, water, and lemon juice. Bring to a simmer over medium heat.
Add sugar and spices: Once the apple cores are soft (about 10 minutes), add the sugar, cinnamon, and nutmeg. Stir well to dissolve the sugar.
