Instructions
Rinse the kaniwa seeds under cold water and drain well.
In a medium saucepan, combine the kaniwa seeds and milk. Bring to a gentle boil over medium heat.
Reduce heat to low and simmer for about 15 minutes, stirring occasionally, until the kaniwa is tender and the mixture thickens.
Add the cocoa powder, honey or maple syrup, vanilla extract, and salt. Stir well to combine.
Remove from heat and stir in the dark chocolate chips until fully melted and the mixture is smooth.
Divide the pudding into serving bowls and let it cool slightly. Refrigerate for at least 1 hour to set.
Serve chilled, topped with whipped cream and fresh berries if desired.
Chef's Tips
- Texture Tip: For a smoother pudding, blend the cooked kaniwa mixture before adding the chocolate chips.
- Sweetness Adjustment: Adjust the sweetness by adding more or less honey or maple syrup to taste.
- Vegan Option: Use almond milk and vegan chocolate chips for a dairy-free version.
- Storage: Store leftovers in an airtight container in the fridge for up to 3 days.
- Garnish Ideas: Try garnishing with chopped nuts, shredded coconut, or a sprinkle of cinnamon for extra flavor.
