Ingredients
- 2 tbsp vegetable oil
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 2 carrots, grated
- 2 tomatoes, chopped
- 1 tbsp curry powder
- 1 tsp paprika
- 1 tsp chili flakes (adjust to taste)
- 1 can baked beans (optional)
- Salt and pepper to taste

Instructions
Heat the vegetable oil in a large pan over medium heat.
Add the chopped onion and sauté until translucent, about 3-4 minutes.
Stir in the minced garlic and cook for another minute until fragrant.
Add the diced green and red bell peppers, and cook for 3-4 minutes until softened.
Mix in the grated carrots and chopped tomatoes, stirring well to combine.
Sprinkle in the curry powder, paprika, and chili flakes. Stir to coat the vegetables evenly.
Reduce heat to low, cover, and let simmer for 10-15 minutes, stirring occasionally.
If using, add the baked beans and cook for an additional 5 minutes.
Season with salt and pepper to taste. Serve warm.
