Prepare the shrimp: Pat the shrimp dry with paper towels. Season lightly with salt and pepper.
Make the sauce: In a small bowl, mix soy sauce, oyster sauce, honey, sesame oil, and red pepper flakes. Set aside.
Heat the oil: Heat vegetable oil in a large wok or skillet over medium-high heat until shimmering.
Cook the shrimp: Add shrimp to the wok and stir-fry for 2-3 minutes until pink and opaque. Remove and set aside.
Stir-fry vegetables: In the same wok, add garlic and ginger. Stir for 30 seconds until fragrant. Add bell peppers and broccoli. Stir-fry for 3-4 minutes until crisp-tender.
Combine everything: Return shrimp to the wok. Pour the sauce over and toss everything together. Cook for another 1-2 minutes until heated through.
Garnish and serve: Sprinkle with sliced green onions and sesame seeds. Serve immediately over rice or noodles.
Chef's Tips
- Prep ahead: Have all ingredients chopped and sauce mixed before starting to cook for a smooth stir-fry process.
- High heat: Use the highest heat possible for the best stir-fry results, but be careful not to burn the ingredients.
- Shrimp size: Use large or jumbo shrimp for better texture and to prevent overcooking.
- Vegetable variations: Substitute or add other vegetables like snap peas, carrots, or mushrooms.
- Sauce adjustment: Adjust the sweetness or spiciness of the sauce to your taste by adding more honey or red pepper flakes.
- Freshness: Use fresh shrimp for the best flavor and texture; frozen shrimp should be thawed and patted dry before cooking.
