Ingredients
- 2 cans (5 oz each) tuna in water, drained
- 1/4 cup mayonnaise
- 1/4 cup diced celery
- 2 tbsp diced red onion
- 1 tbsp lemon juice
- 1/2 tsp Dijon mustard
- Salt and black pepper to taste
- 4 slices bread (sourdough or whole wheat)
- 4 slices cheddar cheese
- 2 tbsp butter, softened

Instructions
In a medium bowl, combine the drained tuna, mayonnaise, celery, red onion, lemon juice, and Dijon mustard. Mix well.
Season the tuna mixture with salt and black pepper to taste. Adjust the seasoning if needed.
Butter one side of each bread slice. Place two slices, buttered side down, on a clean surface.
Divide the tuna mixture evenly between the two slices of bread, spreading it out evenly.
Top each tuna-covered slice with two slices of cheddar cheese, then place the remaining bread slices on top, buttered side up.
Heat a skillet over medium heat. Place the sandwiches in the skillet and cook for 3-4 minutes per side, until golden brown and the cheese is melted.
Remove from the skillet, let cool for a minute, then slice in half and serve warm.
