Ingredients
- 2 cans (5 oz each) tuna in water, drained
- 1/4 cup mayonnaise
- 1/4 cup diced celery
- 1/4 cup diced red onion
- 1 tbsp lemon juice
- 1/2 tsp salt
- 1/4 tsp black pepper
- 4 slices bread (sourdough or whole wheat)
- 4 slices cheddar cheese
- 2 tbsp butter, softened

Instructions
In a medium bowl, combine the drained tuna, mayonnaise, celery, red onion, lemon juice, salt, and black pepper. Mix well until evenly combined.
Preheat a skillet or griddle over medium heat.
Spread the tuna mixture evenly on two slices of bread. Top each with two slices of cheddar cheese, then cover with the remaining bread slices.
Butter the outside of each sandwich lightly on both sides.
Place the sandwiches on the preheated skillet. Cook for 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.
Remove from the skillet, let cool for a minute, then slice in half and serve warm.
