Instructions
Prepare the marinade: In a small bowl, whisk together olive oil, lemon juice, lemon zest, minced garlic, dill, parsley, salt, black pepper, and smoked paprika.
Marinate the salmon: Place the salmon fillets in a shallow dish and pour the marinade over them. Coat evenly. Cover and refrigerate for at least 30 minutes (up to 2 hours for deeper flavor).
Preheat the grill: Heat the grill to medium-high (about 375°F-400°F). Lightly oil the grates to prevent sticking.
Grill the salmon: Remove the salmon from the marinade and let excess drip off. Place skin-side down on the grill. Cook for 4-5 minutes without flipping.
Flip and finish: Gently flip the salmon and cook for another 3-4 minutes, or until the internal temperature reaches 145°F and the fish flakes easily.
Rest and serve: Remove from the grill and let rest for 2-3 minutes. Garnish with extra fresh herbs and lemon wedges before serving.
Chef's Tips
- Skin-On Tip: Leaving the skin on helps keep the salmon moist and makes flipping easier. You can remove it after cooking if preferred.
- Don’t Overcook: Salmon is best when slightly pink in the center. Overcooking can dry it out.
- Alternative Cooking: If grilling isn’t an option, broil in the oven at 400°F for 10-12 minutes.
- Marinade Variations: Substitute dill and parsley with rosemary or thyme for a different flavor profile.
- Serving Suggestions: Pair with grilled asparagus, quinoa, or a fresh green salad.
