- 2 Arctic Char fillets (about 6 oz each)
- 1 orange, segmented and diced
- 1 grapefruit, segmented and diced
- 1 lime, juiced and zested
- 1 small red onion, finely diced
- 1 jalapeño, seeded and minced
- 2 tbsp fresh cilantro, chopped
- 1 tbsp olive oil
- Salt and black pepper to taste

Prepare the citrus salsa: In a bowl, combine the diced orange, grapefruit, red onion, jalapeño, cilantro, lime juice, and zest. Mix gently and set aside.
Season the Arctic Char fillets with salt and black pepper on both sides.
Heat olive oil in a non-stick skillet over medium-high heat. Once hot, add the fillets skin-side down.
Cook for about 4 minutes until the skin is crispy and golden. Flip carefully and cook for another 3-4 minutes until the fish is opaque and flakes easily.
Remove the fillets from the skillet and let them rest for a minute.
Serve the Arctic Char topped with the citrus salsa. Garnish with extra cilantro if desired.
