Instructions
Preheat the oven to 400°F (200°C). Pat the cod fillets dry with paper towels to ensure even cooking.
Season the cod fillets generously with salt, black pepper, dried thyme, and dried parsley on both sides.
Heat olive oil in an oven-safe skillet over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant.
Place the seasoned cod fillets in the skillet. Cook for 2 minutes on each side until lightly golden.
Add lemon slices on top of the cod fillets and dot with butter. Transfer the skillet to the preheated oven.
Bake for 8-10 minutes, or until the cod is opaque and flakes easily with a fork. Serve immediately.
Chef's Tips
- Fresh Herbs: Substitute dried herbs with fresh thyme and parsley for a brighter flavor.
- Even Cooking: Ensure fillets are of similar thickness to cook evenly.
- Extra Flavor: Add a splash of white wine to the skillet before baking for added depth.
- Serving Suggestion: Pair with roasted vegetables or a light salad for a complete meal.
- Storage: Store leftovers in an airtight container in the fridge for up to 2 days.
